I love Joe Cocker's version of "With a Little Help from My Friends" - just about the only cover that I'd listen to at least as often as to the Beatles' original. No others come immediately to mind anyway. And I'd love to hear some other opinions.

A Perfect Circle does a great cover of "Imagine", and Alice Coopers "Hey Bulldog" rocks. Butchering The Beatles offers some good covers, as well as some not so good. The "I Am Sam" soundtrack has a lot of other great covers, also.
